Anyway these are almost graham cracker-like because they're more sturdy than cookies, but not crispy. The honey taste is slight and the cookie isn't overpowering. It's a bit dainty, actually.
Also, if you've noticed, I'm coming up to the 50th recipe on here. Suggestions for number 50 are welcome!
Swedish honey cookies
1/2 cup butter
2/3 cup brown sugar
1/3 cup honey
1 egg
2 cups flour
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Preheat the oven to 375 degrees F
1. Cream the butter and sugar
2. Add in the honey and egg
3. Mix in flour, salt and cinnamon
4. Turnout onto a sheet of clear plastic wrap. Wrap and refrigerate for at least 30 minutes
5. Roll out the dough to 1/8 inch and cut with a cookie cutter
6. Bake for 5 to 7 minutes, until edges brown slightly
